Bahía del Duque launches market cuisine with Alisios Market Food
Wednesday, April 12 2017.- The hotel Bahía del Duque launches a new culinary space, Alisios Market Food. A concept that focuses on seasonal products and market cuisine, where fresh ingredients are selected daily from fruit and vegetable markets, local fishmongers and butchers, but also imported from the mainland Spain.
With this opening Bahía del Duque continues to innovate, and is adding to its gastronomic offer a new avant-garde concept of quality using locally sourced organic and seasonal products.
Alisios Market Food is a restaurant with a small menu that is complemented with a large daily specials list. The chef Lucas Ordóñez has created a journey through local, national and international cuisines, with dishes carefully crafted using fresh local and seasonal products.
According to Michel Burgio, Food & Beverage Manager of Bahía del Duque “Alisios is a modern, fresh and fun restaurant, different from any other concept we have in the hotel. The restaurant is divided into three spaces, a covered terrace with ocean views, the interior decorated as a traditional market where fresh fruit and vegetables will have their own space and a bar area where guests can enjoy a gin tonic or glass of champagne whilst listening to music”.
Fried shrimp with kimchi sauce, Bao buns with Canarian pork, pickled onions, cilantro and lime; or free-range chicken baked in a Josper oven are some of the items on the menu, which is renewed and complemented daily with dishes created from seasonal ingredients. Coinciding with the opening, the chef suggests the red tuna tataki with sesame seeds, Tudela artichokes with a fresh truffle mayonnaise or black potatoes with Beluga caviar and Amanita Ponderosa mushroom shavings, amongst others.
A garden that evokes the authentic essence of the market
Alisios is situated in the central plaza of the hotel. Its interior design comes from the hand of Raúl de la Rosa, Brand manager of the Hotel, and his team who have wanted to evoke “a bucolic garden where we would all like to lose ourselves and feel the essence and freshness of the countryside, the moist earth and the sea breeze, which is just a few meters away”.
They have used elegant upholstery in bright colours for the furnishings where classic lines fit perfectly with modern pieces, using copper as a main element that recreates the traditional markets and light wood that adds luminosity.
The décor is completed with a selection of original artisan works of art that reflect elements from the menu, such as fish banks, indigenous species as well as a delicate collection of accessories that surround the culinary experience with elegance and comfort.
The market cuisine is also present in the accessories, where a cart in the heart of the main area showcases a selection of seasonal vegetables; the essence of the Alisios menu.
The restaurant is only open for dinner from 19:00h to 23:00h. External reservations are permitted for clients not staying in the hotel, subject to availability. The chef is Lucas Ordoñez.
