Santa Cruz de Tenerife, March 2015.- The Gran Hotel Bahía del Duque (www.bahia-duque.com), company owned by Grupo CIO (www.cio-company.com), is reopening its emblematic restaurant “La Brasserie” with a fully renovated design and with the collaboration of Belgian chef Pierre Résimont, renowned expert in international cuisine, who has created a new dinner menu to be served from mid-march onwards.
“Passion, creativity and flavours are the ingredients of my cuisine and I hope the guests of Gran Hotel Bahía del Duque enjoy it” states Pierre Résimont, prestigious Belgian chef, owner of the restaurant L’Eau-Vive in Namur which has two Michelin stars, and the Brasserie Le Comptoir de l’Eau-Vive, also close to Namur in Belgium. Known for his high standard culinary philosophy, his cuisine is characterized by the use of local and seasonal products.
The new dinner menu, designed by Pierre Résimont, represents the traditional concept of a French Brasserie including artisan proposals and ingredients common in this style of menu but with a renewed concept, where Résimont has focused each dish on the uniqueness of its ingredients.
Among the dishes to be enjoyed in this new era of “La Brasserie”, we can highlight Mollet eggs, cépes soup, croutons and foie gras; King Prawns, guacamole, gel of passion fruits and breadcrumbs of squid ink bread; Snails, cream of lettuce and froth of bacon with sour red onions; Sole Meunière, mashed potatoes “Résimont” style and salad; or Squab, celery risotto and mashed potatoes.
Regarding the new look of the restaurant, in the words of Raúl de la Rosa, Image Director of the Gran Hotel Bahía del Duque, “we have been inspired by the traditional Parisian brasseries, and have updated the look following the latest trends in interior design. As a final result, we have created an eclectic environment, where different elements from different time periods coexist; from French Provence furniture, to lamps from the 19th century or a chair from the sixties. The predominant colour is blue as to not detach ourselves from our original Brasserie and this is also the colour that represents France. As a defining element, we can emphasize the decision to incorporate an open kitchen, allowing us to establish a more direct channel with our guests as well as offering an amazing feeling of spaciousness”.
